Abstract

In order to find answers in two cases where expert opinions were required the ethanol loss when flambeing spirits was investigated. This was done by flambeing 2 cl of "Sambuca" and "Friesengeist" each in two types of glasses "Mannheim" and "Wachtmeister" for two minutes at 20-second intervals. Ethanol loss in the same type of glass varied only marginally from one type of drink to the other. The type of glass, however, was of great importance: in the "Mannheim" glass, where the surface of the liquid was approximately 1.6 times larger, ethanol loss after one minute was 0.6 g and 1.2 g after two minutes for both types of drinks. In the "Wachtmeister" glass ethanol losses were about half as high. The investigations show that flambeing may cause forensically relevant ethanol losses of up to approximately 18 % after two minutes.
